Easy, quick, gluten-free small focaccias suitable for everyone, made with rice flour and cooked in an air fryer. Great to fill as you like and enjoy as a snack or appetizer.
Bring the water to a boil.
Add the extra virgin olive oil, salt, and all the rice flour to the boiling water at once.
Stir vigorously until the dough detaches from the sides and is no longer sticky, then turn off the heat.
Divide the dough into 4 equal parts.
Roll out each part and shape as desired.
Fill as you like, then close the small focaccias.
Dip the focaccias in beaten egg and then in gluten-free breadcrumbs.
Cook in an air fryer at 190°C for 18 minutes.
Serve hot and enjoy.

Store in the refrigerator and consume within 2 days. Can be reheated in the oven or air fryer.
