
Simple and replicable falafel enriched with dried shiitake mushrooms for an intense umami note. Cooked in an air fryer for even crispiness and practical preparation.



In a bowl, combine chickpea flour, salt, oat flour, and granulated dried shiitake mushrooms.
Gradually add water while mixing until you obtain a homogeneous and workable mixture.
Form uniform-sized balls with the dough.
Place the balls in the air fryer and brush or spray a small amount of extra virgin olive oil on each.
Cook in the air fryer at 180°C for 15 minutes, turning the balls halfway through cooking for even browning.
