Have you ever tried making mayonnaise with mushrooms? Today we suggest a very easy egg-free Shiitake mushroom mayonnaise to make at home, paired with a vegetarian piadina.
Soak 1 sachet of IoBoscoVivo dried Shiitake mushrooms for about 30 minutes.
In a jug for the immersion blender, add the plant-based milk of your choice and the oil, and start blending from bottom to top until the mixture begins to thicken; then add the juice of half a lemon.



Cook the Shiitake mushrooms in a pan for a few minutes and add them to the mayonnaise. Blend everything and add a pinch of salt.
Ingredients for the piadina: cut the vegetables and brush them with oil and rosemary before placing them in the oven at 180°C for 15/20 minutes.
Remove the vegetables from the oven and brush them with a parsley sauce with oil and 1 sachet of IoBoscoVivo Shiitake granules, then put everything back in the oven for 3 minutes at 180°C.
