Tajarin with truffle is a typical Piedmontese first course, refined and elegant, but above all simple to prepare. It is a type of pasta typical of Piedmont and can also be served dry or in broth. The touch of refinement and flavor comes from pairing it with Alba white truffle, whose unmistakable aroma makes this first course a great autumn classic of Piedmontese cuisine. Pair it with Barolo, garnet red in color with orange highlights. On the nose it is complex, fruity, elegant, intense, spicy, ethereal. On the palate it is austere, harmonious and persistent with excellent body.
Each product available on the platform is listed and sold by a partner seller identified on the product page. The platform acts as a metasearch/marketplace: it facilitates discovery and checkout, but the sale is made by the seller, who becomes responsible for the transaction.
Shipping is managed directly by the partner seller. The package is sent from the seller's warehouse or logistics network and handed over to the courier. This model enables more efficient deliveries and ensures that order management is handled by the party with actual availability of the product.
On the product page, you will find ingredients, allergens and nutritional information based on the data provided by the seller or producer, namely the official label. If you have allergies or intolerances, we recommend carefully checking the product page before purchasing and contacting the seller with any specific questions.
The platform was created to promote Italian food and make it more accessible. We select sellers in the food e-commerce sector with consistent catalogs and transparent information. Each product is associated with an identifiable seller and a complete information page: we want shopping here to mean buying with confidence.
Delivery times and costs depend on the seller and destination. At checkout, you will always find an updated delivery estimate before confirming payment. For international shipments, times may vary depending on the country and courier.
Place the flour in a well on a wooden board, forming a hole in the center. Pour the egg yolks and water into the hole, add the salt, and knead the mixture vigorously by hand.
Once smooth and homogeneous, wrap it in plastic wrap and let it rest for 2 hours in the refrigerator.
Take the dough out of the refrigerator half an hour before using it. Now it is up to you to decide whether to roll it out with a rolling pin or with a pasta machine.
It is important that for classic Piedmontese tajarin, the pasta is very thin and cut finely, almost like 'angel hair'.
Once you have the tajarin, cook them quickly in boiling water, taking great care not to overcook them, and toss them in a pan with butter, Parmigiano, and a splash of cooking water.
Plate them and grate the white truffle on top.
