Prepare all the ingredients and open the mozzarella, removing its water, dry it and cut it into thick strips.
Cut two slices of melon cleaned of seeds and the nectarines pitted.
Cut the melon into cubes and the nectarines into wedges, and finally the walnuts.
Cook the nectarines on a hot griddle for 5 minutes on each side.
Let the nectarines cool down.
On a plate, prepare a bed of arugula and baby lettuce as desired, then pour all the ingredients on top.
Season with extra virgin olive oil and salt, and seeds as desired.
