Let's start by cooking the frozen spinach (I do it in a pan with extra virgin olive oil and garlic, but microwave or boiled also works).
We squeeze them very well and blend them in a mixer with nutmeg and salt.
Then pour them into a bowl and gradually add the flour (the result will be quite sticky).
Without a piping bag or hands, but simply armed with two spoons, we make gnocchi and drop them directly into boiling salted water.
When they rise to the surface, drain them in a pan with extra virgin olive oil flavored with rosemary.
We sauté them for a few minutes to season them and then plate up.
Add Parmesan Reggiano, lemon zest and hazelnut granules to taste.
