Preheat a grill or nonstick pan over medium-high heat.
Place the mortadella slices on the hot grill and cook for 1-2 minutes per side, until lightly golden and marked by the grill. Mortadella cooks quickly, so avoid drying it out.
In a small bowl, mix the balsamic vinegar with the extra virgin olive oil. If you want a thicker glaze, you can reduce the vinegar in a small saucepan over low heat for a few minutes before mixing it with the oil.
During the final stage of cooking, brush the mortadella slices with a few drops of the balsamic glaze or drizzle with a teaspoon; add a sprinkle of black pepper to taste.
Serve the slices hot, garnished with herbs if you like. Excellent as an appetizer on crostini or as a light main course.
