The Ubriaco all'Amarone della Valpolicella DOCG cheese from La Casara Roncolato captures all the flavor of the Lessini mountains. The cheesemaker wanted to collaborate with one of the leading figures of Veronese and Italian winemaking: Amarone della Valpolicella DOCG. The cheese is made from cow's milk using the same technique as Monte Veronese DOP. When still fresh, it is placed in contact with the grape pomace of grapes dried with Amarone DOCG wine. After contact and resting, the cheese is aged from 8 to 19 months. It is a rare delicacy! During aging in the wine, it absorbs a significant amount of product that penetrates centripetally towards the center. Subsequently, during maturation, the drying of the cheese tends to evolve the flavors while maintaining the developments of Amarone DOCG. The love for alpine milk, for natural pastures, for Amarone DOCG is all here, in a creation unique in its kind. A rare testimony of a Veneto area, Lessinia and Valpolicella, exalted and preserved in this cheese which is nothing but a small safe of aromas and flavors.
