
The Ubriaco all'Amarone della Valpolicella DOCG cheese from La Casara Roncolato contains all the flavor of the Lessini mountains. The cheesemaker wanted to take on one of the leading figures of Veronese and Italian winemaking: Amarone della Valpolicella DOCG. The cheese is made from cow's milk produced using the same technique as Monte Veronese DOP. While still fresh, it is placed in contact with the grape pomace from grapes left to dry with Amarone DOCG wine. After contact and resting, the cheese is aged from 8 to 19 months. During refinement in the wine it absorbs a significant amount of product that penetrates centripetally toward the center. Later, during aging, the drying of the cheese tends to develop the flavors while maintaining the characteristics imparted by Amarone DOCG. The love for mountain milk, for natural pastures, for Amarone DOCG is all here, in a creation unique of its kind.
