
Jhannu Organic Oolong Tea takes its name from the highest mountain visible from the Pativara plantations. It is made from Assam leaves and processed according to the Darjeeling tea process to create teas with different degrees of fermentation. The gentle rolling is followed by a first fermentation of 2 to 3 hours. The second rolling breaks down the structure of the leaf and its intercellular walls and is followed by another fermentation of 2 to 3 hours. The final rolling, just before heat fixation, maximizes the intensity of the flavor, adds freshness and highlights the terroir. Place of origin Nepal. Preparation We strongly recommend brewing this tea according to the traditional Chinese method (gong fu cha) to fully appreciate the complexity of these leaves. We advise using 5 grams of leaves (about 4 teaspoons) in a 100 ml gaiwan in order to obtain several infusions with different flavors. After a quick rinse of the leaves in water at 100°C, you can proceed with a first infusion of 5 seconds, increasing the time by 10 seconds with each subsequent infusion, while keeping the water at the same temperature. This tea can be infused up to about 7 times. For a more classic preparation according to the Western style, 3 grams of leaves (about 2 teaspoons) in a 150 ml cup with water at 100 °C are recommended, with a steeping time of one and a half minutes. The tea can be filtered for a better tasting experience. The infusion times are purely indicative and can be adjusted according to personal taste.
