Take a cookie and spread a teaspoon of yogurt on top.
Add a teaspoon of grated coconut on top of the yogurt.
If desired, add a bit of sweetener.
Cover with another cookie to form a sandwich.
Melt the pistachio chocolate with a teaspoon of milk in a saucepan over low heat, stirring continuously.
Dip half of the sandwich in the melted chocolate.
Sprinkle a bit of grated coconut over the chocolate.
Place the sandwich in the refrigerator for about 15 minutes to firm up.
