Preparation

    If the dates are a bit dry, soak them in hot water for about 5-10 minutes to soften them. Drain well before using.

    Place the pitted dates in a food processor and blend until you get a sticky and smooth paste, scraping down the sides if necessary.

    In a medium bowl, mix the chufa flakes, oats, freeze-dried blackcurrant powder, seeds, and a pinch of salt.

    Add the date paste to the bowl with the dry ingredients and mix well until all ingredients are well combined.

    Take about a tablespoon of the mixture and roll it between your hands to form balls about 2-3 cm in diameter.

    If desired, roll the energy bites in shredded coconut, chufa flour, extra freeze-dried blackcurrant powder, or chopped oats.

    Place the energy bites on a plate lined with parchment paper and refrigerate for at least 15-20 minutes to firm up.
