A clean, elegant seafood dish in which delicate steamed cod meets olive-oil mashed potatoes enriched with Gracilaria flakes. Finished with Oriental Surf crumble for aromatic umami and a pleasant texture.

Peel and cut the potatoes into pieces, then boil them in salted water for 12-15 minutes or until tender.
While the potatoes cook, steam the cod fillets over water at a gentle boil for 8-10 minutes, or until opaque and tender.
Drain the potatoes and mash them while hot with the olive oil, Gracilaria flakes and chopped parsley. Salt and add a squeeze of lemon.
Divide the mash among the plates and place the steamed cod fillets on top.
Finish with a generous sprinkling of Oriental Surf crumble and a final squeeze of lemon for freshness.
