
A tasty and colorful appetizer made of an outer layer of mozzarella rolled out with a rolling pin and a filling of cured ham, copper tomato and arugula. The mozzarella is softened by heating it with its preserving liquid (and more water) in the microwave or in a saucepan, then rolled out, filled and rolled up. About 12 slices are obtained, to be served as finger food.

Place the mozzarella in a bowl with its preserving liquid and add more water until completely covered.
Heat in the microwave at 900 W for 7 minutes to soften the mozzarella (alternatively, heat in a saucepan with the same amount of water until the mozzarella softens).
Wash and thinly slice the copper tomato; prepare the arugula and the slices of cured ham.
Transfer the softened mozzarella with a spoon onto a sheet of baking paper, cover it with a second sheet and quickly roll it out with a rolling pin until you get a thin rectangle about 35 x 25 cm.
Carefully remove the top sheet of baking paper, salt the surface and distribute the slices of cured ham over the mozzarella rectangle.
Add the slices of copper tomato and the arugula, then another layer of cured ham if desired.
Roll everything up using the baking paper, tightening well as you wrap the filling.
Let the roll rest wrapped in the baking paper in the refrigerator for at least 10 minutes.
Remove the baking paper and cut the roll into about 2.5 cm slices to obtain about 12 pieces.
Serve as an appetizer or finger food.

Store in the refrigerator for up to 2 days. Do not freeze.
Feel free to use your imagination for other fillings (e.g. ham and melon with mint). If you do not have a microwave, heat the mozzarella in a saucepan with water until malleable.
