The Neapolitan Casatiello is one of the most traditional baked goods of the Neapolitan food and wine culture. Panificio Rosa Maria Vittoria revives an ancient recipe from an important Neapolitan culinary master, Salvatore Esposito, famous for preparing one of Queen Elizabeth of England's wedding cakes in 1947. Casatiello is typically a savory Easter pie, but the Molise bakery offers it all year round. Culinary art was not shared as it is today, and many recipes were secret. Salvatore Esposito guarded each recipe like a precious jewel, and only some were passed down to his children. His granddaughter, who joined the Rosa Maria Vittoria family by marrying his son, donated the precious Casatiello recipe to the Molise bakery. Salvatore Esposito was against the hard-boiled eggs that adorned the rustic pie, partly for hygiene and partly because they broke during transport.
