Preparation

  1. STEP 1 OF 6

    Combine the oat flour, unflavored whey protein and instant yeast in a bowl, then mix the dry ingredients thoroughly.

  2. STEP 2 OF 6

    Add the water and 5 g of extra-virgin olive oil, then work the mixture until you obtain a smooth, moldable dough.

  3. STEP 3 OF 6

    Divide the dough into four portions and shape four focaccine directly on a baking tray lined with parchment paper.

  4. STEP 4 OF 6

    Gently press the cherry tomatoes onto the surface of the focaccine and add the rosemary and salt to taste.

  5. STEP 5 OF 6

    Finish with the remaining extra-virgin olive oil and bake in a preheated oven at 190 °C for 18–20 minutes.

  6. STEP 6 OF 6

    Remove the focaccine from the oven when slightly golden, let them cool for a few minutes and serve.
