A savory wrap inspired by Thai flavors, quick to prepare, lactose-free and egg-free. It uses crunchy peanut butter for a crunchy, filling note. It can be made with turkey or tofu for a vegetarian version, and with gluten-free tortilla if needed.
Lightly warm the tortilla in a pan or on a griddle to make it softer.
Spread the tablespoons of crunchy peanut butter over the tortilla in an even layer.
Drizzle with lime juice, spreading it over the peanut butter.
Arrange the sliced turkey (or tofu) in the center of the tortilla, then add the julienned carrots, cucumber strips, and mixed salad greens.
Season with salt and pepper to taste.
Tightly roll up the tortilla to form the wrap.
Grill the wrap for about 1–2 minutes per side (about 2 minutes total) until golden and compact.
Cut in half and serve warm or lukewarm.
